This week, Jess and I decided to try something harder than we’ve ever tried.. Lemon Lavender Bars!! I saw the picture of these on Pinterest and knew we just had to do them, even if it would be a huge fail in the end. You can see the link to the recipe here. Before we started baking, we popped over to the grocery store to grab a couple things, and then headed back to Jess’s house to start baking.
To start, we preheated our oven to 350˙F and sprayed with none stick spray our 9×9 inch baking pan.
Next, we put all the dry ingredients into the mixing bowl which included: granulated sugar, table salt, all-purpose flour, and unsalted butter. We used google home to help us find the right measurements for our butter. We mixed everything together until it started to form large crust pieces. We started to get a bit nervous because our crust looked like flour, not thick like a crust. We decided to just put it in the oven after we patted it down with a spoon in the pan, to see if baking the crust might help it hold its shape.
While the crust was baking, we started on the custard portion. We beat the eggs together in the mixer until they were “thick but not frothy” . We then beat in the sugar, lemon juice, baking powder and salt. 25 minutes had past, so we decided to take a look at the crust. Both Jess and I thought it looked a little undercooked, so we decided to put it back into the oven for just a few minutes because we knew it would be going back in with the custard soon.
Once we brought the crust back out and let it set for a couple minutes, we added the custard on top. We but the pan back into the oven approximately 20 minutes.
After 20 minutes we checked on our custard. We were a little concerned that the custard wasn’t solidifying, but we discovered that small bubbles were forming, which is a sign they needed to be taken out and we didn’t want to overcook it.
After letting it cool. We added icing sugar onto by sifting it gently across the bar. It looked so pretty and like snow had just fallen on top. We then used a knife and a mini spatula to cut the bars in the pan and placed them on a baking sheet. It took us a couple tries to get them out perfectly, but once we did it was smooth sailing from there. We topped the bars with a little lemon slice and lavender.
From the reviews from our peers, we’ve gotten very high praise for these. These are my favourites to date.
Next time we’re hoping to make some halloween treats since we’re getting into the Spooky Season.
