Alright since Halloween just passed we thought we’d finish off with our last festive baking challenge. We decided to make Chocolate Monster Cookies. This recipe is so cute and again found on Pinterest here.
We’ve also been wanting to create a recipe that was gluten/dairy free for those people in our cohort. SO for this recipe we made sure we used gluten free flour when regular flour was needed and dairy free chocolate for the toppings.
We started with 1-3/4 cups of gluten free flour and 2/3 of a cup of cocoa powder
Then we added 1 tsp of baking powder
1/2 tsp of salt
We mixed all these ingredients together and set them aside so we could start on our wet ingredients
We put in 1-1/4 of a cup of brown sugar
We then added 1/2 a cup of butter, 2 eggs, 1/3 of a cup of corn syrup
1 tsp of vanilla extract
We then mixed in our dry ingredients into the wet
Next, we added 1 cup of our diary (and gluten free) chocolate chips
1-1/2 cups of Reese’s Pieces
After we mixed all these together, it was time to put them in the oven. After we mixed them, we thought the consistency looked a little off because of the gluten free flour. It also tasted a little “grainy” but we decided to put them in a see what happens. We were suppose to roll the dough with our hands but since the consistency was a little more runny, we decided to use spoons and put them on the parchment paper.
We then waited 15 minutes and brought the cookies out. They looked really delicious! We waited about 10 minutes for them to cool down and then put our decorations on top to make them look like little monsters.
These were probably the cutest treats we’ve made to date. Every LOVED them and were so thankful for the alterations to the recipe so everyone could have some. We both thought they were delicious and would definitely make these again.
